Eight years ago advertising producer Nicole and her husband, Holger, a Director of Photography, drove a campervan from their home in Zurich to Italy in search of a countryside bolthole. They ended up falling in love with a six-hectare plot of olive groves beside Lake Bolsena, north of Rome, even though there was no house on the stretch of land. Undeterred, they hauled two vintage circus wagons from Germany, transformed them into living quarters and set about mastering the art of cultivating olive trees. \u201cWe had to learn everything from scratch,\u201d says Nicole. The couple launched feinsinn, a small production facility making 1,000 litres of oil a year from olives harvested by hand from their own trees and made without the use of chemicals. \u201cWe came from Zurich,\u201d says Nicole. \u201cWhat did we know about making olive oil?\u201d Despite this, the pair took a wine-maker\u2019s approach to oil, blending grassy Canino olives and smoother varieties. With Italian-made dark glass bottles and a smart logo, the striking Feinsinn look is \u201creduced to the minimum, like life here by the lake,\u201d says Nicole. <\/em><\/div>
